It has been a month now on my sugar-free health detox and I realised that anything can be adapted for a more healthy lifestyle and we can still have treats.
Pancake Day was my most favourite foodie holiday. Before going sugar & refined flour free, I would have around 7 pancakes topped in acres of sugar and lemon juice. In essence I was a pancake fiend. As you can see from my more recent blog post ‘Are You Addicted To Sugar?‘ I was indeed a sugar addict and it was having a detrimental affect on my health. So for this Shrove Tuesday I made a beautiful pancake flower.
My pancake, instead of being made with refined flour, used beautiful wholesome kamut flour, I had no sugar in the recipe & no honey or other types of sweetener (crikey?! No sweeteners?). Why did I do this? Well as a recovering sugar-addict I needed to get my taste-buds used to less sweet products, so this was my personal choice. You may add sweeteners to my recipe or not, it’s entirely up to you.
So here is my Pancake Sunshine Flower. Lots of fruit made up for the lack of sugar and sweeteners, and I was satisfied by one pancake (instead of my usual 7).
I was using an adapted American recipe, so measure in cups (and to be honest I find this so much easier now).
1 Cup of Kamut Flour
1 1/4 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of cinnamon
1 1/4 cup of whole milk (I now use almond milk and its a lovely alternative)
1 tablespoon of natural yoghurt
1 teaspoon of vanilla extract
Toppings: fruit, cream.
I heated the frying pan and placed a small amount of butter (I prefer butter to oil in the pan for pancakes, especially when your going sugar-free, it gives you that extra satisfying oomph!).
In a medium bowl I placed the flour, baking powder, baking soda and cinnamon (at this stage if you cannot imagine no sweetener, add 1 tablespoon of honey, agave syrup… whatever you prefer).
In another bowl mix together the milk, yoghurt, eggs and vanilla.
Bring together the wet and dry ingredients in one bowl (or a large jug – I found this helpful for pouring into the pan). Mix together fully until it looks like a good pancake mixture (I used an electric hand blender to do this). And add more milk if necessary.
Pour your required amount into the hot frying pan and cook until bubbly and then flip (or if your coward like me, carefully turn over with a spatula lol!).
And there you go, a healthy pancake alternative full of sunshine and happiness!
Once on the plate add your favourite fruit. I used strawberries, kiwi, mandarin oranges, melon and peaches. Many of my fruits were inexpensive and were bought in their own juice in tins. The others were in the reduced section of the supermarket (budget conscious a priority for me!). And as an added treat I poured a little single cream over the pancake, delicious!
